Mini Sweet Potato Pies


Well, it’s one of those ‘save-the-food-days’. I made mashed sweet potatoes for dinner the other night and I still have plenty left over, so instead of throwing out perfectly awesome mashed sweet potatoes (because my bf is tired of them lol. Hey we have to get our men eating healthy.) I have decided to make mini sweet potato pies.

For the crust:

1 1/4 c Unbleached All purpose flour
1 Tbsp raw sugar
1/2 tsp kosher salt
1 stick of butter
2 Tbsp water
1/2 Tbsp vinegar
1 egg

Filling time:

2 c mashed sweet potatoes
1/2 c brown sugar, packed
1 egg
1/2 Tbsp vanilla
1/4 c flour
1/4 c vanilla almond milk
1/2 tsp ground cinnamon
Dash of nutmeg
1/4 c raw sugar

1. Pre-heat oven to 375 For the crust mix together the egg, water, and vinegar. In a seperate bowl mix flour, sugar, and salt and combine the wet with dry until a sticky ball forms. Now you will need extra flour to form a workable dough crust. Now form your ball and place bowl in the icebox.

2. With your hand mixer blend all the filling ingrediets together. Mix for 2 minutes until it nice and fluffy. Taste and adjust to YOUR taste buds ;)

3. Take your crust out and pinch 12 balls for your muffin pan. Press the balls in each section then add in your filling. Now throw those bad boys in the oven and bake for 30-45 minutes. The crust should be golden brown. Enjoy!
